Ester

Chemical compounds derived from an acid where at least one -OH (hydroxyl) group is replaced by an -O-alkyl (alkoxy) group.

Organic esters are commonly derived from a carboxylic acid and an alcohol. An important case are glycerides, which are fatty acid esters of glycerol. They are also responsible for many of the familiar fragrances of fruit, herbs and spices.
